Processed from fresh
The harvesting of our fresh products takes place in a very short time and at the desired point of maturity, so they can be quickly processed while still maintaining their organoleptic properties. In order to obtain an excellent final product, we select only top-quality raw materials and we do not use any semi-finished goods. The Casato Bertoia’s processing workshop is located right next to the gardens to ensure the processing of the fresh produce at the optimal time to reduce its oxidation to the minimum.
Processed by hand
Manual harvest preserves the integrity of fresh produce since it avoids lacerations and other damages that can compromise its quality. This phase represents the first and most important selection of the fresh product, which is entered in the production cycle only if it responds to the desired characteristics. An additional visual inspection of the vegetables is also conducted by manually conducting the weeding and cleaning process. The portioning can also be done by hand for some products since it ensures that each cut is done following the natural shape of the vegetable, such as the case of our Giardiniera
Extra creams, compotes, and jams are processed vacuum-sealed at low temperatures (45/55°C) in order to obtain the maximum concentration, thus exalting their organoleptic characteristics, scents, and flavors.
A concentrate of quality
All our work translates into a great product quality that will be wellmaintained in our organic preserves. To offer our clients a concentrate of flavors and nature all our preserves are made with natural ingredients only. The percentage of fruit and vegetables contained in them varies from 50% up to almost 90%, depending on the different varieties.
